Ingredients
For the Carrot Ginger Dressing
- ¼ c SR® Organic MCT oil
- 1 large Carrot, chopped
- 1 inch knob of fresh Ginger
- 1 tbsp Sesame oil
- ⅓ c Rice vinegar
- 1 tsp honey
- 1 Garlic cloves
- Salt & pep
For the Salad
- Butter Lettuce
- Carrots
- Purple cabbage
- Edamame
- Red onion
- Sesame seeds
Instructions
- Place all ingredients for the dressing into a blender and blend until smooth.
- Taste and adjust seasonings as needed.
- Compile salad ingredients into a bowl and add any additional toppings you would like. Drizzle Carrot Ginger Dressing over top and enjoy!
