Manuka Honey Nut Granola

This quick, easy, and downright delicious snack is perfect for the whole family and a great healthy treat to get you through the day. Add it to your breakfast and make yourself an Acai bowl, throw some yogurt on top to create a granola parfait for lunch, or better yet, make yourself a delicious homemade granola bar snack as an afternoon treat!

 



Ingredients

4 cups rolled oats

1 cup sliced almonds

1 cup chopped pecans and/or walnuts

1 cup dried cranberries

2 tablespoons canola oil

1 cup Manuka Honey

1 tablespoon vanilla extract

1 tablespoon ground cinnamon

Directions

Step 1
Preheat oven to 130° degrees C (270° F)

Step 2
In a large bowl, stir in oats, almonds, pecans/walnuts and dried cranberries. In a separate bowl, mix together oil, honey, vanilla extract and ground cinnamon. Pour oil, honey, vanilla and cinnamon mixture into the bowl with the oats and nuts; mix well. Spread mixture onto two baking sheets (ungreased).

Step 3
Place tray in preheated oven for 25 minutes. Take out and stir every 7 minutes, returning to oven. Bake until golden. Remove from oven and place sheet on another tray or on top of a tablecloth to cool. Let rest for 10 minutes and then enjoy! 

 

*You can substitute the almonds, pecan, walnuts and cranberry with your preferred choice of nuts and fruit.
